Appetizers/Sides
Bacon Wrapped Weenies
There is nothing easier and faster to prepare and more delicious than bacon wrapped anything. Super simple and always a hit at family gatherings.
Coconut Battered Shrimp
Some friends of ours back in Charlotte made this as an appetizer before a 'Supper Club' meal. Words were exchanged with regard to who got the last shrimp.
Grilled Prosciutto-Wrapped Shrimp
This is one of the many recipes contained in the 'Just a Small Gathering' cookbook. It can be a bit labor intensive the first time you make it. It's worth it though because who doesn't like grilled shrimp wrapped meat!
Schadek Surprise
This is a very basic dip that is fast and easy to prepare. It derives its name from a friend of ours that provided the minimalist ingredients list.
Breads
Homemade Zucchini Bread
This recipe makes two loaves of delicious goodness. It is a very dense bread, but when it's warm and buttered it's like Heaven in your mouth.
Pan De Jamon
This Venezuelan Ham Bread recipe was provided to me buy a friend of mine while on one of my many contract gigs early in my career. If prepared correctly, it is absolutely delicious!
Rosemary Peasant Bread
This, by far, is one of the best breads that I make. I grow rosemary in my garden just so I can make this bread all winter long. My daughters refer to it as "yummy bread" and "crack bread".

Chicken Enchilada Casserole
No idea where this one even came from, but it's delicious!
Life and Death Casserole
This dish is perfect for gifting when there has been a birth or death in the family. The dish can be stopped after it is assembled and simply dropped off for refrigeration. When the recipient is ready to eat it, sometime days later, all they have to do is throw it in the oven.
Homemade Macaroni and Cheese
My wife makes this for us and every time it is devoured... let's just say it's not for the health conscious and leave it at that.
Stuffed Pork Tenderloin
Pretty much what the title says. Take a pork tenderloin and stuff it was sauteed spinach and cheese.
Slow Roasted Pork Shoulder
Having grown up in North Carolina I can tell the difference between good and bad BBQ. This method makes goooooood BBQ!
Steak Au Poivre

Shrimp Burger
When we go to the coast on vacation, the family always seems to clamor for my shrimp burger... along with my low country boil! Anyhoo, the recipe makes six delicious shrimp burgers. However, with a house full of 16 people, I make this recipe and cut the burger into quarters and serve it as an appetizer.
Stuffed Pheasant
This is one of the many main dishes I've made for the "Italian Regional, Feast, Wine, Cooking & Culture Group" that I'm a member of here locally. It just so happened that I'd been pheasant hunting just a few months prior to this traditional Italian feast. When they say 'traditional' Italian feast, this means a three to four hour food sampling marathon. I am happy to report that there were no leftovers of this dish.
